Strawberry Banana Bread {Paleo, Vegan}

I just so happened to have both strawberries and bananas that were very ripe and about to go bad, so to save the food, I decided to whip up this paleo and vegan strawberry banana bread.

This banana bread is super moist and packed with flavor- it is probably the best paleo bread I have ever made! I can’t stop nibbling! Make at your own risk 😉

Ingredients:

3 ripe bananas
2 cups strawberries, diced
2 chia eggs (2 tbsp chia seeds mixed with 5 tbsp water)
1/4 cup coconut oil, melted
1/4 cup maple syrup
1 tsp vanilla extract
1/4 cup milk of choice (I used cashew)
1/2 tsp apple cider vinegar (ACV)
1 1/4 cup cashew flour (or almond flour)
1 cup tapioca flour
1/4 cup coconut flour
1 tsp cinnamon
1/2 tsp sea salt
1 tsp baking soda

Instructions:

1. Preheat your oven to 350 F. Grease a 9×5 loaf pan with coconut oil.
2. In a cup, mix the cashew milk and apple cider vinegar together and set to the side.
3. Combine all of the dry ingredients (flours through baking soda on ingredients list) in a medium sized mixing bowl.
4. In a separate large mixing bowl, mash the bananas. Be sure not to over-mash, you want some chunks.
5. To the mashed banana, add strawberries, the chia eggs, coconut oil, maple syrup, vanilla, and the milk mixed with apple cider vinegar. Hand mix with a large spoon until combined.
6. Add the dry ingredients to the wet ingredients and mix to combine using a large spoon.
7. Pour the batter into the baking pan and bake uncovered for 20 minutes. After 20 minutes, cover the loaf with tin foil and continue to bake for another 40 minutes or until cooked through.
8. Let cool and enjoy!
