Paleo Maple Sriracha Pancakes {Grain free, Dairy Free}

This morning I woke up craving something spicy and sweet, and that is how these maple sriracha pancakes were born! If your grain free or dairy free these pancakes are for you. They are light, fluffy, sweet, savory and just all around delicious. The perfect comfort food if I do say so myself.

I slathered a little coconut cream on top with a sprinkle of red chili flakes, and was good to go! Nothing like a little kick in the taste buds to start the day.

Ingredients:

3 eggs

1 1/2 cups almond flour

1 1/4 tsp baking powder

3 tbsp avocado oil

1/4 cup maple syrup

2 tsp vanilla extract

2 tbsp sriracha

1/2 tsp sea salt

coconut oil for frying

Instructions:

1. Combine all ingredients together in a bowl using an electric hand mixer (or vigorously hand whisk) until well combined and there are no lumps. 

2. Heat a frying pan over medium-low heat and add coconut oil to coat the skillet.

3. Spoon the batter onto the skillet, making pancakes 3-4 inches in diameter. The smaller you make them, the easier they are to flip.

4. Cook for about 2-3 minutes on one side and then flip and cook for another 1-2 minutes on the other side.

5. Serve immediately and enjoy!

Notes: Tastes great with a little coconut cream or coconut butter slathered on top.
